Wonder of Wonders

Look at what I baked tonight!!

I've also made dinner four nights in a row. Granted one of those might have been a leftovers warm up, but I put forth the effort to do that instead of getting take-out or going to a restaurant. 

I can't tell if I have more energy than a few months ago, if I'm prioritizing my tasks better, if I managed to change my attitude towards cooking enough, or if I'm pushing myself too hard. I will admit that I was sick from exhaustion yesterday evening, although that often happens on Sundays. 

Still, I planned meals for the week and made a grocery shopping list for tomorrow. I might even attempt to do the shopping myself as opposed to delivery. I've ordered some of my old favorite gluten-free baking supplies which have already begun to arrive. I did discover some of my baking staples at home to be expired, so I am limited on what I can make until the grocery trip. 

Here's to hoping I can make dinner two or three more evenings this week.
